The grocery shopping has been done, it’s time to make dinner and although there’s food, you just can’t figure out what on earth to make it with all! It’s a familiar sitaution that we’ve all been in, so here are a few basic things to keep on your shopping list, so if you’re ever running low on ideas or food, there will always be something yummy for you to whip up... .jpg)
Shopping List - Canned tomatoes
- Carnation Lite and Creamy evaporated milk
- Dried pasta
- Parmesan cheese
- Eggs
- Tuna
- Onion and garlic
Sauces For the fridge/freezer: - Rindless bacon
- Chicken breast
- Frozen mixed vegetables, stir fry mixes
Recipes Creamy Tomato and Tuna PastaCook 1 cup of dried pasta as per the directions on the packet. In a deep fry pan, add ½ can of chopped tomatoes, ½ can of Carnation Lite and Creamy evaporated milk, 1 tablespoon of parmesean cheese, one finely diced onion, and 2 cloves of crushed garlic. Heat gently, stiring continously. Drain 1 can of tuna and flake into the sauce mixture. Add the cooked pasta, season with salt and pepper and heat through. Serve in bowls and sprinkle with some extra parmesean cheese. Alternative: Cook one chicken breast, chop into pieces and add instead of the tuna Frittata5 eggs 2 tablespoons of Carnation Light and Creamy evaporated milk (or you can just use milk) 1 tablespoon flour 2 rashes of bacon ½ teaspoon each of salt and pepper ½ chopped onion 2 tablespoons parmesean cheese ½ cup cooked vegetables from a frozen stir fry mixture 1 cup of cooked pasta (or you can use chopped cooked potato, kumara or pumpkin which add a nice flavour) Chopped mushrooms, chopped sundried tomatoes (optional). Beat together eggs and milk, mix in flour, bacon, salt and pepper, onion and the cooked pasta. Add the vegetables, pasta and parmesaean cheese. Put in a large frying pan and cook over a low heat for 8-10 minutes or until it begins to set. Then place the frittata in the pan under a preheated hot grill and cook for 3 minutes until golden. Leave for 5 minutes before slicing into thick wedges. Serve immediately with a fresh salad and some crusty bread. Chicken Stir Fry
Chop up a large chicken breast into thin slices and marinate in 1 tablespoon each of soy and sweet chilli sauce and 2 cloves of crushed garlic. Brown the chicken in a wok for 10 minutes. Add a bag of frozen stir fry mix, and any other vegetables of choice and a tablespoon of soy sauce. Cook until frozen vegies are heated through. Serve with rice. Optional: Add a tablespoon of chopped cashew nuts at the end of cooking and mix through.
Other things you can make... Poached eggs, bacon and cooked tomatoes Poach eggs in a fry pan, cook bacon and heat a can of whole tomatoes in a fry pan until warm. Serve on toast for a hearty breakfast Tuna Patties Mix a can of tuna, 1 egg, 1 tablespoon parmesean cheese, ½ chopped onion and 2-3 tablespoons flour together. Season with salt and pepper and cook in a fry pan with a little olive oil. Serve with a big salad full of vegetables. Sweet Chili and Tuna sandwiches Mix tuna with sweet chili sauce place on bread and top with salad and some low fat mayo. Nicola Graham
