The name of this soup might sound a little dirty (if your mind is in the gutter!), but it’s definitely a fantastic winter warmer and you get your protein (meat), carbohydrates (potatoes) and vegetables in all in one go! Plus the great thing about this soup is that you just slice everything, using whatever you can find at home and leave it to simmer! The key element is the Dutch Smoked Sausage. You can generally find this at delis, the butcher’s, or even try the markets sometimes they have specialty stalls in smoked meat. . The flavour coming from the sausage is what makes the stock in this soup, making it so simple to cook!
Serves 3-4 people 2 potatoes: 1 finely sliced, 1 roughly cubed 1 length of smoked Dutch sausage, sliced 3 cubed or quartered tomatoes 1 sliced stalk of celery (or any other vegetable you have, even cabbage tastes great in this soup!) 2 sliced carrots 1 diced onion 1 minced clove garlic Water, salt and pepper to taste
1: Dice the onions, mince the garlic and cook in olive oil until the onion turns translucent.
2: Take the finely sliced potato (I do this so the sliced pieces break apart making the soup thicker) and the cubes and put in to the pot with all the other vegetables.
3: Slice the sausage into 5mm thick pieces and put in the pot also pouring water in until it nearly covers ingredients.
4: Season with salt and pepper and let the pot simmer until it turns a nice slightly orange colour and the vegetables are soft and cooked. (It generally takes 25mins).
5: Serve with toasted, buttered bread!
This soup is great to freeze and heat up for later and tastes even better the next day.
