Delicious Summer Recipes

Now that spring is blooming and summer is just around the corner it’s time to start thinking about delicious, light and scrummy summer treats!

We’ve got some great recipes to see you through, from breakfast and lunch, right through to dinner. Of course, they’re also all bikini friendly and super healthy too... 

Breakfast
Fruit Salad
Breakfast is the most important meal of the day, so make sure you get a fabulous start to the day with a delicious and super healthy breakfast. Here’s our fav recipe for a scrumptious fresh fruit salad…
 
Serves 2
125g sweet cherries
1 banana
2 apricots
125g plums
1 tablespoon lemon juice
2 tablespoons liquid honey
1 springs mint
1 small honedydew melon
 
Remove the pits from cherries. Slice banana, apricots and plums. Combine fuit in a bowl. Mix lemon juice and honey and pour over fruit. Remove mint leaves from sprigs. Cut into fine strips and stir into salad. Cut the melon in half and scarpe out seeds. Scoop out flesh from melon, leaving a rim of flesh about 1cm thick. Add melon balls to bowl. Enjoy!
 
Lunch
Brown Rice Salad
This delicious brown rice salad is filled with nutrients and omegas 3, 6 and 9 thanks to the delicious 3six9 salad dressing. It’s dead easy to whip up and is absolutely divine – a winner all around!

Serves 4-5
175g brown rice, cooked
6 spring onions, sliced
1 red pepper, cored and diced
1 green pepper, cored and diced
½ can whole corn
50g currants
50g roasted cashews
2 TBLSP roasted sunflower seeds
6 TBLSP dressing (ingredients listed below)
 
Dressing
175ml flax seed oil
4 TBLSP 3six9 Tamari dressing
2 TBLSP lemon juice
1 clove crushed garlic
Salt and Pepper
Makes ½ pint
 
Mix all ingredients, arrange on a plate and sprinkle with 3 TBLSP of chopped parsley. 
 
Dinner
Thai Chicken Salad
This scrumptious chicken salad is full of delicious fresh and clean summer flavours, and is also super filling…

Serves 4
1 iceberg lettuce
1 tablespoon vegetable oil
500 g chicken mince
2 medium red chillies, seeds removed and finely chopped
3 large cloves garlic, crushed
1 tablespoon fish sauce
2 tablespoons lime juice
½ cup blanched roasted peanuts
1 medium red onion, finely sliced
½ cup each: basil leaves, coriander leaves
¼ cup shredded mint leaves
1 cup mung bean sprouts
sweet chilli sauce to serve

Wash and dry the lettuce leaves, discarding any tough outer leaves.  Refrigerate until required. Heat the oil in a wok or frying pan and cook the chicken, chillies and garlic until the chicken is completely cooked. Remove the pan from the heat, allow to cool slightly and then add the fish sauce, soy sauce and lime juice. Once cooled to room temperature mix in the peanuts, sliced onion, herbs, and bean sprouts. Spoon into lettuce cups to serve and drizzle with sweet chilli sauce.
